Green Beans
Freezing green beans is so much easier than canning them. What was I thinking all these years?
Pressure cookers make me nervous… and cook the living daylights out of food, making a person wonder if there’s any nutritional value left whatsoever in that poor vegetable.
Wait a minute! I’m supposed to be getting ready for my writing retreat. Why am I freezing beans? Oh yeah. Because I’m Dutch and can’t stand to have (free) food go to waste.
I agree…have NO idea what I was doing all those years…freezing the beans is so much easier and they taste soooooo much better…let alone the nutritional value. We had (free) beans also – I hate to tell you how many totes and lugs we picked up from the cannery – Sarah and I decided we needed someone along to save us from ourselves…we did beans for 2 or 3 days straight..mind you enough to feed 4 hungry families and a few singles as well. What can we say – we’re Dutch and proud of it.
